1 large port butt (about 3-6 lbs) white vinegar- enough to cover meat chopped garlic - 1/4 to 1/2 cup depending on size of pork butt 4 - 5 chili peppers chopped table salt 2-3 Medium Potatoes quartered (Optional) |
Cut pork in 2-inch cubes, sprinkle with salt and rub into meat. Sprinkle garlic and chili peper over meat, rub & mix. Add vinegar to cover pork, stir, cover and let stand for 24 hrs.
The following day, combine meat and vinegar in a large pot bring to a boil and lower heat and cook for about 25 minutes or more. Check to see if meat is soft but not falling apart. Put meat & vinegar mixture in bowl and cover. Fry as needed. |

Use glass or stainless steel bowl to soak meat. If adding potatoes they may be added to the mixture after about 12 hours of marinating. |
Stuff Shells
Ingredients | Preparation |

1 Box Jumbo Shells 4c Mozzarella cheese 1 1/2c Parmesan cheese 32oz Ricotta cheese 1 Egg Parsley flakes 2 Jars of your favorite pasta sauce |
Cover bottom of 13x9 pan with sauce
Boil shells until tender In large bowl combine cheeses, egg and 1tsp parsley flakes (more if desired). Fill shells with mixture and arrange in pan, cover with sauce and mozzarella. Bake for 45 minutes at 325. |

Twice Baked Potatoes
Ingredients | Preparation |

8 - 10 Potatoes 1/2 Stick of butter 1/2 Cup sour cream |
Bake potatoes until tender. Cut in half and scoop out the insides. Mix potatoes with butter and sour cream. Mix until creamy. Bake potatoes at 325 for 35 minutes |

Sticky Chicken Wings
Ingredients | Preparation |

3 pounds chicken wings 1 cup packed brown sugar 1-teaspoon mustard 3/4 cup soy sauce 1/4 teaspoon garlic powder 1/8 teaspoon ground ginger |
Cut each chicken wing into 3 portions, discarding the tips. (Save tips for chicken stock) Rinse the chicken and pat dry. Place the chicken in a large oblong baking dish. Combine the brown sugar, mustard, soy sauce, garlic powder and ginger in a bowl and mix well. Pour over the chicken. Bake at 350º for 1 to 1½ hours or until cooked through, turning once. |
